The majority of vitamins required by the human body were discovered from 1913 to 1948. It was also discovered that many vitamins were lost during the cooking process, whether it is frying, boiling or steaming. When vegetables are boiled vitamins C and B will actually dissolve inside the liquid, and if this liquid is discarded the vitamins will be lost, which is why some researchers recommend consuming the water.
Many countries have regulations which define the limits for mineral or vitamin dosage for dietary supplementation. The majority of vitamins which are sold for this purpose must not go above a specific daily maximum, which is officially referred to as the upper tolerable intake level. While there are vitamin products that go above such limits, they sometimes aren’t classified as supplements but rather prescription drugs.
